Halloween Baking – Bats!!

Given the lack of an oven in my apartment, I had to make Halloween treats that didn’t require any baking; these are pretty delicious!

And very easy to make, with only 5 ingredients:

Coca cola cake

As we also had a lot of coca cola left from the wedding I decided to try out a new recipe. It’s Nigella’s chocolate and coca cola cake found on this blog:

Lemon leaving cakes

For my last cakes at work before I leave for Singapore I’ve made a lemon drizzle cake. Actually I made two – so that the HR team and the business team can have one each and not fight over it!!

Pre-wedding cake

I made a lemon drizzle cake and some delicious cheese scones for a tea and cake gathering the day before my sister’s wedding.

The cheese scones were from a Paul Hollywood recipe and tasted great made with fresh rosemary from my parents’ garden. They got lots of compliments!

I also made a lemon drizzle cake from a recipe I’ve used before but it tasted a lot better; I think because I didn’t use an electric whisk to mix it all together. It was especially good with the eggs from my Dad’s chickens

Healthy (?!) chocolate cake 

well, it does have vegetables in it! Plus it’s dairy free if you don’t eat the ganache icing…

This recipe made a deliciously moist courgette chocolate cake. The tin I used was a bit smaller so I made a couple of muffins as well, so we could test it before anyone tucks into the real thing!

Creme egg “scotch eggs”

You may have seen these on social media- “scotch” eggs that are made with creme eggs in the centre and covered in chocolate.I decided to give them a go this weekend!

Heart shaped shortbread

i haven’t made shortbread in a while so decided to make some as it’s quick and easy.

I used this recipe and used 1.5 times the quantities:

When they were cool i drizzled dark chocolate over them (I use Sainsbury’s own brand as it tastes really good) and then added white chocolate hearts to some of them:

Showstopper – Hannah’s death by chocolate birthday cake

There seem to be a lot of birthdays at work at the moment!

Hannah requested a chocolate cake for hers so I decided to make this one decorated with Cadbury’s chocolate fingers and Maltesers

I used Nigella’s chocolate cake recipe which has soured cream in it. I added some milk to the batter as it was quite thick.

I sandwiched the cakes together with raspberry jam and then covered the top and sides with ganache. I used 300ml double cream with 200g dark chocolate and 100g milk chocolate. Here’s a good article on how to make and use ganache:

Then I used a mix of white and milk chocolate fingers and placed them around the edge, put Maltesers on the top and tied it with a ribbon!

Valentine’s brownies

The request this week was for Nigella’s brownies.

I used cacao powder and Cadburys dairy milk chocolate, however the recipe came out more like a cake, than brownies:
